    Dry Ingredients 

 

1 cup of cornmeal

1 cup of flour

2 teaspoons of baking powder

1/4 cup of sugar (optional)

1/2 teaspoon of salt

 

    Wet Ingredients

 

1 cup of milk or buttermilk

1 egg

1/4 cup of butter, melted

Cheddar Cheese ( I used 1 cup )

4  Breakfast Sausage cooked and chopped fine

2 Jalapenos remove seeds and pith (optional)

slice thinly, the more seeds you leave, the spicier the muffins are.

 

Mix dry ingredients, fold in the wet ingredients, I use an ice cream scoop to scoop the mixture into cupcake papers in muffin tin.

 

Bake in preheated oven 400 degrees for 25 minutes.

 

You may want to spray the cupcake paper so it doesn't stick to the muffin, I live and learn, I didn't spray it so when I tried to peel paper off muffin, the muffin pulled off with paper.

Sounds good Blondie I am going to see if I can get corn meal at the local health food store and make them (minus the jalapenos) .. will let you know how they turn out !

I believe that the recipe indicates that removal of the seeds and pith is optional, not that the Jalapenos are.

One must remember that the noble Jalapeno is a mild, flavorful pepper, especially after the nasty seeds have been removed.

That sounds really good.

I, and my entire family, love hot/spicy things, so this recipe is bound to be a winner :)
