Blondie Posted June 6, 2014 Report Posted June 6, 2014 Dry Ingredients 1 cup of cornmeal 1 cup of flour 2 teaspoons of baking powder 1/4 cup of sugar (optional) 1/2 teaspoon of salt Wet Ingredients 1 cup of milk or buttermilk 1 egg 1/4 cup of butter, melted Cheddar Cheese ( I used 1 cup ) 4 Breakfast Sausage cooked and chopped fine 2 Jalapenos remove seeds and pith (optional) slice thinly, the more seeds you leave, the spicier the muffins are. Mix dry ingredients, fold in the wet ingredients, I use an ice cream scoop to scoop the mixture into cupcake papers in muffin tin. Bake in preheated oven 400 degrees for 25 minutes. You may want to spray the cupcake paper so it doesn't stick to the muffin, I live and learn, I didn't spray it so when I tried to peel paper off muffin, the muffin pulled off with paper. Eat and Enjoy!!!!!!!!!!

Smiley Posted June 10, 2014 Report Posted June 10, 2014 I believe that the recipe indicates that removal of the seeds and pith is optional, not that the Jalapenos are. One must remember that the noble Jalapeno is a mild, flavorful pepper, especially after the nasty seeds have been removed.
