This is a recipe that was given to me a few days ago, I made it yesterday and it's really good.

 

Ingredients:

2-2/3 cups plain flour

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon mixed spice

1-1/3 cups castor sugar (it may be called something else in the USA it's very fine refined sugar)

1/2 cup brown sugar

200ml sunflower oil (that would be just under 1 cup - and I only had vegetable oil so used that)

3 eggs beaten with a fork

2 teaspoons vanilla extract

2 medium to large grated zucchini

1/2 to 3/4 cup chopped dried cranberries

3/4 cup chopped walnuts (optional)

 

Put all DRY ingredients in a large bowl, take the lumps out of the brown sugar 

Then add the zucchini, cranberries and walnuts.

 

Mix with your hands until everything is mixed together - the mixture will be soft and gooey.

 

Put into a loaf tin that has been lined with baking paper

 

Bake in an oven at 180C (about 356F) and cook for 1 hour and 15 minutes.  It is cooked when a skewer comes out clean.  You can check after 45 mins then every 10 minutes.

 

Once cooked, leave in the pan until completely cool then place in the freezer for 30 minutes before cutting - this ensure it does not crumble when cut.

 

Slice it as you would for bread and it's great by itself or with a spread of cold butter 

 

Note:  the final mixture was too much for my loaf pan, so I cooked the remainder in a muffin tin and reduced the cooking time to 45 minutes.
