Administrators Nan Posted February 22, 2012 Administrators Report Posted February 22, 2012 This is my recipe for muesli slice which is healthy and yummy at the same time. Great with a cup of tea or coffee as a snack. Ingredients: (these can differ to your preference with regard to the dried fruit and berries you use) 125g Butter - chopped 1/3 cup firmly packed brown sugar 2 tablespoons honey 1-1/3 cups rolled oats 1/2 cup shredded coconut 1/2 cup self-raising flour 1/2 cup dried cranberries 1/2 cup finely chopped dried pineapple 1/2 cup slivered almonds 1/2 cup finelychopped walnuts (for those with allergies to nuts you can leave out the almonds and walnuts and substitute something else - perhaps some pipetas - pumpkin seeds - or other seeds and grains) Preheat oven to 180C (moderate) Grease a `9cm x 30cm pan and line with baking paper Heat butter, sugar and honey until all sugar disolved then pour into dry ingredients. Press firmly into the pan and bake for about 20 minutes. Cool in pan before cutting into slices. Store in an airtight container. Serve with a cuppa for morning or afternoon tea and enjoy
