Smiley Posted January 5, 2012 Report Posted January 5, 2012 Here is a recipe that we picked up about 40 years ago while travelling around the world with the U.S. Army. It was, and still remains, a favorite at parties, especially around the holidays. I just served it to a group of 33 folks at our holiday open house and along with the other foods served it almost disappeared. TEX MEX DIP 3 ripe avacados (note: avacados must be ripe, i.e., feel soft when squeezed.*) one lemon 1/2 cup mayonaise one cup sour cream one 16 oz can refried beans one envelop taco seasoning three medium tomatos a bunch of spring onions (7 or 8) one small can (4 oz) chopped green chilis (optional) 1/2 cup chopped or sliced black olives 1 pound shredded cheddar cheese salt pepper preparation: Halve avacados, scoop out meat from skins, and remove seed. Mash with potato masher and add the juice of one lemon, a pinch of black pepper and a 1/4 tspoon of salt. Mix mayonaise, sour cream, and taco seasoning. in a shallow (two inches or so) caserole: Spread the refried beans in a thin layer on the bottom of the dish spread the mashed avacados in a uniform layer over the refried beans spread the mixture of mayonaise, sour cream, and taco seasoning in a uniform layer over the avacado layer Cover with wax paper or saran wrap and refrigerate until shortly before serving Just before serving: chop three tomatos (or use one can of drained diced tomatos) and spread evenly over top of caserole sprinkle the shredded cheddar over the top of caserole chop green onions finely, including the green stems, and sprinkle over caserole sprinkle the green chilis over the caserole if desired (if you are adventurous, subsititute four oz of pickled jalapeno peppers) sprinkle black olives over the caserole. Serve with taco chips, tostitos, or similar corn chips. *If the only avacados available at your local super market are not quite ripe, i.e., they have roughly the hardness of a golf ball, place them in sealed brown paper bag for two or three days. That will ripen them nicely.
