I believe in America, pumpkin is used as a dessert, whereas in Australia and other countries pumpkin is eaten as a vegetable with roast dinners, mixed with mashed potato, and in soups. Pumpkin soup is a very popular soup here, and just delicious, as well as being good for you.

 

Below is an easy pumpkin soup recipe:

 

Ingredients

 

1 tblsp of olive oil

4 - 6 cups of pumpkin diced - there are many different types of pumpkin, but a nice rich orange coloured pumpkin that is not too watery is the best choice. (Please don't use canned pumpkin for this as it is not suitable)

1 large carrot roughly diced

1 large onion roughly diced

1 large potato peeled and roughly diced

1 teaspoon of nutmeg

3 - 4 cups of chicken or vegetable stock

Salt and Pepper to taste

1/2 cup of thin cream

 

Method

Heat oil in large saucpan and then add onion and cook until it is transparent

Add nutmeg and cook briefly to release the aroma

Add carrot, potato, pumpkin and stock and bring to the boil

Turn heat down and simmer for approximately 30 to 40 minutes or until vegetables are soft

Remove from heat and allow to cool slightly then blend

Return soup to saucepan and add cream and reheat gently

 

Serve in a soup bowl with a sprig of parsely and if you like, a swirl of cream in the centre

Serve with crusty warm bread and/or croutons
